This is probably one of my favourite recipes I created but haven’t had time to perfect. I couldn’t get the quiche consistency correct. Now, I’m on my food plan, I wonder if I could make an egg white quiche instead?

Next step if to find a crust that I like…. nothing too oily, flakey but not hard…
Just a quick recipe. It’s inspired by a Spanish chard dish.
Chard, pine nuts, raisins, and chopped red onions.
This time I made it with spinach, and used puff pastry for the base. The pastry tasted wonderful! But because it was a thicker pastry, I used a deeper dish. I had to add one more egg and 80 ml of cream and I added ten minutes to the cooking time. It probably could have been 15 minutes, but the texture was a little like flan. It was really nice.
