This was my simplified version Inkoko Nama Spices which is roasted spiced chicken in In Her Kitchen. Mainly, the instructions was “mixed ground BBQ spices” but I’m not so sure what Zambian BBQ spice was… so I just used the base.
Mix juice from one and a half lemon, rosemary, plus my leftover herbs in my kitchen, with was tarragon and thyme, salt and pepper (recipe said use flat leaf parsley and basil).
Put the chicken in a glass pan, then pour the the marinade on the chicken drum sticks, make sure it’s covered then leave for a few minutes.
Put it on broil for 10 to 15 mins, making sure it browns but doesn’t burn then turned the drumsticks, then another 10 to 15 minutes. Then turn on the over to 400 f, and leave for ten minutes until cooked through.
I bought two packs of drum sticks and made two separate batches.
Next time, I might use the same base, and add whatever rubs I have to see what happens.
We ate chicken legs at dinner, and then used the meat for salad for lunch.
